More than 450 estate-grown apple varieties come together in a remarkably broad orchard blend. Half is wild-fermented outdoors, while the remainder ferments under more controlled conditions, combining rustic character with balance and precision. Full-bodied and dry, the palate carries layered apple depth and a subtle hint of funk through the finish. Serve lightly chilled with roast pork, aged cheddar, charcuterie or mushroom dishes.
