The 2018 Pet-Nat Blanc de Blancs is comprised entirely of organic, sustainably-farmed hand-harvested Chardonnay. Whole berry clusters were pressed into concrete and stainless steel vessels with spontaneous fermentation. The wine was aged on the lees for 5 months prior to secondary fermentation taking place in bottle en tirage and not disgorged. No dosage was added.

On the nose, the mouthwatering aromas of lemon drop and honeysusckle mingle with notes of green apple and apricot. On the palate, this wine is decidedly effervescent. It literally explodes from the bottle with bubbles en masse. It has great acidity and a wonderful freshness typical of sparkling natural wines. Enjoy it on its own or with salad appetizers and fresh seafood.
Due to the lack of chemical manipulations these wines will appear cloudy and contain sediments, this is not a fault. Please store in a cool place.
