In Spain's hot, sparsely populated, and landlocked southwestern region of Extremadura, the first commercially-released brand was Bonaval Cava. This highly-technical and precision-run Cava-only facility is owned by Bodegas Lopez Morenas (founded 1943), in a friendly and hardworking ‘Ruta del Vino’ town surrounded by vineyards and not far from the Guadiana River. The local Iberico ham and olives alone make for a tempting menu that seems appropriate from dawn until bedtime, however late that may be.
Bonaval Cava Brut Nature

Champalou Vouvray Brut
100% Chenin Blanc. A remarkable complexity with a texture that shows both a creamy richness and marked minerality. A fantastic alternative to Champagne, it boasts a floral nose with notes of peaches and melon. The honeyed palate is round with excellent acidity and a deliciously long finish.
Fleury Rosé Brut
Jean-Pierre Fleury is something of a master craftsman when it comes to making Pinot Noir dominated Champagne. Again the style here owes as much to Burgundy as it does to the grand marques of Champagne. 100% Pinot Noir made by maceration with all of the skins in contact with all of the juice. Most rosés made in this style are very big, but this one is the exception; it is very elegant. In the glass it has a wonderful, fresh Pinot Noir nose of strawberry fruit and forest air intrigue. Richly textured palate with impressive depth and terroir.
Serge Mathieu Brut Millesime 2009
It has structure, power and length, and bears the mark of its Pinot Noir. It clearly shows all the work that has been carried out in the vineyards since only very ripe and small grapes can produce such density and structure in a Champagne. 8.6 grams dosage. Entirely made from Pinot Noir… clear, fresh and straight fruit of yellow skinned apples and Williams pears along with citrus flavors and some stony notes on the nose. This is remarkably elegant and delicate with a mineral backbone and an excellent grippy finish.
